3 cups cooked sweet potatoes, mashed |

Instructions: |

Mix sweet potatoes, sugar, hot milk and egg yolks. Beat until fluffly. Fold in stiffly beaten egg whites. Pile into greased baking dish. Top with marshmallows, if desired. Bake in 400°F oven until browned on top. If desired, crushed pineapple, raisins, nuts or peach pulp may be added at the same time as the egg yolks. 6 to 8 servings. |
