Instructions: |

Combine the yogurt or sour cream with the cumin and set aside. In a food processor, combine the mashed potatoes with all remaining ingredients, except the butter or oil. Process until smooth In a large skillet, heat the butter or oil. Spoon batter into the pan to form 2-inch pancakes. Fry for about 45 seconds per side, or until golden brown. Top with seasoned yogurt or sour cream; serve immediately. Serves 3-4 |
