Ingredients

2 1/2 cups cooked & mashed sweet potatoes
1/4 cup light brown sugar
1 cup miniature marshmallows
1/2 cup peanut butter
1/2 cup orange juice
1/4 tsp salt
 

Directions

Combine sweet potatoes, peanut butter, juice, sugar and salt. Beat thoroughly. Pour into buttered 9-inch. pie plate. Bake at 350 F for 20 to 25 minutes. Remove from oven, place marshmallows on top. Return to oven for 5 minutes or until marshmallows are melted and lightly browned. 5 to 6 servings.
