Ingredients

1/4 cup maple syrup
2 Tbsp unsalted butter
1Tbsp dark rum
2 tsp grated orange rind
3 medium-size sweet potatoes
1 large Granny Smith apple

Directions

Combine syrup, butter, rum and orange rind in microwave-safe 1 cup measure. Microwave, uncovered, at 100% power 1 to 1 1/2 minutes or until butter melts. Pare potatoes and apple. Grate in food processor or on coarse side of hand grater. Spoon into microwave-safe shallow 2 quart baking dish. Add syrup mixture; stir. Cover with wax paper. Microwave at 100% power 8 to 10 minutes or until potato is tender; stir after four minutes
