Curried Sweet Potato and Chicken

 

Ingredients

3 pounds fresh California sweet potatoes
 (yam variety)
 Salted water
3 cups cubed cooked chicken
1 can (20 ounces) pineapple chunks, drained
   or 2 cups cubes fresh pineapple
1 green pepper cut into strips
1/2 cup sliced green onion
1/2 cups seedless raisins
Curry Dressing on seperate page

Directions

Wash sweet potatoes. In large saucepan, heat enough salted water to boiling to cover sweet potatoes. Add unpeeled sweet potatoes; return to a boil. Cover, reduce heat and simmer 20 to 30 minutes, just untill tender ( do not overcook). When cool enough to handle, peel, halve lenghtwise and slice 1/4 inch thick. Combine sweet potatoes, chicken, pineapple, green pepper, green onion, and raisins. Toss with Curry Dressing. Cover and refrigerate several hours or overnight.  Makes 6 to 8 serving

If using freah pineapple add right before serving
